An Amazing Meal

My husband and I took a short holiday.  He'd been working so hard for the past year and hadn't been able to take any time off.  He even missed our family reunion in August this year.  So he booked us a flight to Vegas.  Sin city!  He wanted to try eating at Jose Andres e restaurant.  They only do 2 sittings a night and only 8 people at each sitting.  So he signed up with the hopes of getting 2 of the lottery tickets that they release.  Needless to say we did get 2 of the last seats on a Thursday night at 8.  The last 2 seats!  Yay!

This was amazingly fresh tasting
It was very light and tart

Cotton Candy 2.0
This was amazing!  Cotton candy
filled with foie gras and corn nuts!
The combination was so interesting!
Rich and salty sweet

We paired our meal with wine from
Spain and this bubbly was so good!
The bottle was so cool!

Beet Kini
The wafer was made from beets
it was filled with a mild soft
Manchego cheese.

I cannot remember everything in this
It was on a phyllo dough type of wafer
covered with eggplant puree, red pepper
and anchovy filet 

This was some doughy goodness
filled with goat cheese

Oh yes!  Oysters 2 ways

One smoked and one served on
a crispy chicken skin with
thyme foam on top.
You can't even imagine how
good this was!

Marinated shark deep fried with
garlic aioli.
The shark is raised not wild caught
and this is upscale for sure!

Smoked oysters!  Not like the
canned ones I used to eat
for sure!!

Cava Sangria
I wish my picture did this dish justice!
the sangria is encased in a thin membrane.
It bursts in your mouth leaving you wanting more!!
This was the most creative dish.  I really can't stop
thinking about it!

A delicate broth with Fava bean
that was pureed and poached in broth
Different oils were dropped in to add
little bursts of flavor

Cod jowls in a herbed sauce.
I can't remember whether it was
parsley or basil now.

Sea Cucumber filled with
pork

Mushrooms en Papillote

Chanterelle Mushrooms smoked in a
plastic bag with a cream sauce.
So delicate and my favorite
mushroom eva!

Oh my!  So amazing!

Served with a chili that was dehydrated
into a chip!  I loved these chips!
I want them now!
Of course the meat just melted in my mouth.
Husband had to finish it for me tho!
Getting so full at this point.

This was a coffee & rum drink
being prepared.  They fire it up
and let it burn for almost 20 minutes!

Getting excited about a photo trip I will be taking with a good friend.  We're heading over to the Eastern Sierra for 4 days to photograph.  Probably hit Bodie and Mono Lake.  Hoping for a bit of interesting clouds.  I might just shoot some stuff for a Platinum Printing Class I'm taking in May.  But mostly looking forward to getting away and holding my camera in my hands.

Professional Development

The two courses I took over the weekend were intended to help me in my professional development, but ended up really helping me in my personal development even more.  I walked away with more insight into my self which I know will help me use the skills that the instructor gave me.  I feel for me that learning keeps me stimulated.  So people get out there!  Learn!  Read!  Take classes you want for enjoyment! It's a lot of fun!

Dreaming
